Your lack of color picture, I would imagine, are due to the color of the plate and adding the rice to the mixture.  However, adding the rice had to have made the rice more tastier!!  (grin)  I think Jim may even be convinced to try this...he could eat around the peppers, and we'd leave out the mushrooms.
